Tasting Note

A broad, focussed nose of lemon zest followed by straw, white flowers and wet stone. Mineral power and energy on the nose is lifted with white peach and citrus fruit flavours on the palate. Samuel Billaud is fast becoming a beacon of excellence in Chablis and we have been proudly supporting him since his first vintage.

The Producer

Samuel Billaud

Samuel Billaud took charge of winemaking at Domaine Billaud-Simon 20 years ago, and is known as one of the best winemakers in the region. In recent years he has struck out to make his own brand of Chablis apart from his family, and assumes control of every aspect of its production. He is a négociant, which means that he buys grapes in from trusted growers. While he does not own the vineyards, he manages them himself, as well as crushing the grapes and vinifying the resulting wines, and he has his own winemaking style.
